How is Biltong Made?
At Beef OC, we only use prime cuts of grass-fed beef to craft our Biltong. The meat is carefully sliced into strips and marinated in a flavorful blend of vinegar and spices. Once marinated, the meat is hung in a controlled environment and dried to delicious perfection.
Biltong FAQs
What is biltong?
Biltong is a traditional South African air-dried meat snack. It’s made by air-drying thick cuts of meat with vinegar, salt and a few spices.
How is biltong different from jerky?
Biltong is air-dried and cut thicker, with simple ingredients. Jerky is usually cooked or smoked at low temperatures, sliced thin, and often contains marinades and sugars.
Is biltong raw?
No. Biltong is cured and air-dried, similar to foods like prosciutto or salami. The process makes it safe to eat.
Does biltong need to be refrigerated?
Not usually. Store it in a cool, dry place. Once opened, refrigeration can help it stay fresh longer, especially in very warm weather.
What meat is used to make biltong?
Most biltong is made from beef. Traditional versions may also use game meats like ostrich or venison.
Is biltong healthy?
Biltong is high in protein and very low in carbs. Traditional biltong contains no added sugar and uses simple ingredients.
Is biltong keto or low-carb?
Yes. Most biltong has little to no carbs and no added sugar, making it a popular choice for keto and low-carb diets.
Is biltong diabetic-friendly?
Traditional biltong is sugar-free and low in carbs, which makes it a good snack option for people watching their blood sugar.
What does biltong taste like?
It’s savory and beefy with a slight tang from vinegar and spices like coriander and black pepper. It’s not sweet like jerky.
Why is biltong cut thicker than jerky during the drying process?
Because it’s air-dried, biltong can be cut thicker without becoming tough.
How long does biltong last?
Unopened biltong can last several weeks to a few months when stored properly. Once opened, it’s best enjoyed within 7–14 days, depending on how dry it is.
Why is some biltong soft and some dry?
It's a personal preference. Softer biltong is more tender, while drier biltong lasts longer and has a firmer bite.
Can kids eat biltong?
Yes. It’s often sliced thin for kids and is a popular choice because it doesn’t contain sugar and is high in protein.
Why is biltong more expensive than jerky?
Biltong generally uses higher-quality cuts of meat, takes longer to make, and is often produced in smaller batches. It also requires more meat to produce, since there are no fillers or added sugars.
Does biltong contain preservatives?
Traditional biltong doesn’t use artificial preservatives. It’s preserved through salt, vinegar, and the drying process.
Where does biltong come from?
Biltong originated in South Africa in the 17th century and has been enjoyed there for generations.
How long does it take to make biltong?
Biltong is slowly air-dried and usually takes about 5–10 days to make, depending on thickness and desired firmness. Jerky is typically heat-dried and often takes less than a day.
